Wagamama Does Veganuary Right With Lion's Mane "Steak" Bulgogi
Quenching meat cravings with savory umami flavors.
Japanese-inspired UK restaurant chain Wagamama keeps innovation at its core, serving tasteful dishes that level up common ingredients. Wagamama is kicking off 2024 by celebrating Veganuary at its fullest, debuting an all-new lion’s mane “steak” bulgogi for plant-based eaters nationwide.
The edible fungi is often harvested for culinary use, promoting a nutrient-dense profile that protects brain health. Wagamama takes steak bulgogi to a new dimension, embracing spiritual practices with meat-forward flavorings. The lion’s mane mushroom is thinly sliced to encourage a satisfying texture, quenching steak cravings with a savory umami sauce. The mushrooms are paired with thick-cut noodles and pickled vegetables, garnished with spicy peppers and fresh parsley.
Wagamama’s “Mind. Body. Bowl” campaign will enlist three vegan creators to set their unique spin on the new meal, inviting Cardiff-based chef Gaz Oakley, female runner Savannah Sachdev, and cooking creator Alfie Steiner throughout the month.
